INGREDIENTS
· 1 Teaspoon Coconut or Olive Oil
· 1 Lb. 80/20 or 93/7 Ground Turkey
· 1 Onion, diced
· 4 Cloves Garlic, minced
· 6 Cups No-Salt Added Vegetable or Chicken Stock
· 18 Oz. Can Diced Tomatoes (including juices
· 2 Bell Peppers, any color, chopped
· ½ Teaspoon Dried Oregano
· ½ Teaspoon Dried Basil
· 1 Bay Leaf
· ½ Cup Brown Rice
INSTRUCTIONS
1. In a large pot, heat the Oil over medium heat. Add the Onion, and cook for approx. 5-7 minutes, until soft.
2. Add the minced Garlic and cook for 1 minute.
3. Add the Ground Turkey and cook, breaking it up with a spatula, until no longer pink.
4. Add all remaining ingredients, bring to a boil, reduce heat and simmer (covered), for approx. 20-25 minutes, or until Rice is cooked through and vegetables are soft.
5. Taste and adjust seasoning, and enjoy!
